The vegetable dish for people who hate vegetables. Seriously – I’ve cooked this broccoli for the pickiest college boys and my foodie family at Thanksgiving. Everyone loves it. It’s a stunner of a veggie dish that’s ridiculously easy to make.
- 2 broccoli crowns, cut into bite-sized little trees
- 3 tbsp olive oil
- 2 tbsp lemon juice
- Salt & Pepper
- sprinkle of parmesan cheese
Preheat oven to 400 F. Chop broccoli into tiny trees. Mix olive oil, lemon juice, and salt & pepper in a large bowl (I use my fingers). Add broccoli to bowl and toss until coated with lemony oily mixture. Spread on a baking sheet and roast for 20 minutes.
Take the broccoli out of the oven and sprinkle parmesan cheese on top. Roast for another 10 minutes.
